Sweet chili meatballs and potato gratin

So I decided to finally cook potato gratin.
I've been meaning to cook it for looooooooong time but...... sometimes, it just takes me long time to do what I want to do.

Why?

That's a one good question that I don't have answer to.
I sometimes have conversation with myself, in my head about it but I never got to conclusion.
One thing I know is that.....when I actually get to it, when I'm thinking about it, it feels good.

Mumm.... seems like I have some deeper issue but, that's not what I meant to talk about today. lol

Yesterday afternoon, what I decided to cook first was the sweet meatballs. I am not sure what is the actual name of this dish.   And as I usually do with any recipes...... I modified it a little.

It is very easy and simple recipe that had 3 ingredient which include meatball.

Ingredients are;
* Frozen meatballs 1LB
*Grape jam 30ml
*Hot chill sauce 20ml

What you do is;
*Throw frozen meat balls in the slow cooker
*Add Grape jam over frozen meatballs
*Add Hot chill sauce over it
*Set slow cooker for high 4 hours
*Wait

What I did different are;
*Add another jar of Grape jam (20ml)
*After adding hot chill sauce, add onion powder (to cover the whole surface)

That's all.

I think it tastes better with more Grape jam and I honestly believe flavor of onion makes everything taste better.

And the best part about this dish is that, you can just leave it in slow cooker then go on with your business.

For potato gratin,

Ingredients are;
*Potatoes (This time, I used 4 Idaho potatoes)
*Shredded cheese (I use cheddar)
*Milk
*Salt and Pepper
*Onion powder
*Garlic powder

What you do is;
*Peel potatoes
*Thin slice all of them
*Season them with salt and pepper when they are still on cutting board
* Grease cast pan (or baking dish) and layer potatoes and shredded cheese
   ex. 1 layer with potatoes then another layer with cheese and continue till use all the potatoes
*On last layer of potato, add onion powder and Garlic powder as you cover the whole surface
*Add another layer of shredded cheese
*Add enough milk to barely covers all the potato (Not too much)
*Cover the pan with foil
*Place it in the oven at 400F for 40 mins
*Once 40 mins is over, check potato and if it's not cooked through, put it back in for another 10 mins then check again until it is fully cooked.

I usually prepared potato and set a side until my meatballs are half way done so they would be finished right around the same time.

And this time, I made Mushroom soup with bunch of onions in to add some vegetable to our dinner.

Mushroom and onion soup

What you need;
*Cream of Mushroom 2 cans (I use Campbell but it could be store brand)
*Water or milk (Same amount as soup)
*butter to saute onion
*Salt and pepper
*2 Onions
*1 small can of mushroom

What you do is;
* Slice 2 onions
*Cut mushroom in small pieces
*Add salt and pepper to taste
*Saute them in pot
*Add cream of mushroom then water/milk, stair (I preserve water from can of mushroom and add in here)
*Heat to warm up

Pretty easy and simple dinner that taste good and keep your family happy :)

Konbanwa! Today, I made some goooood egg sandwich. I haven't found these at store since I moved here but if you have been to Japan, you see these at almost any store that sells food. They are typically good but especially the ones from convenience stores are REALLY good. In Okinawa, until 2016, there were 3 main convenience stores. Family Mart, Lawson and HOT SPAR. Assignment from Japanese Saturday School  Konnichiwa!' Today, I would like to talk about yesterday. No, nothing special happened, it was just the another day of quarantine. But night before, we received a call from County school system to announce that we are following Common Wealth's approach and keep schools closed for the rest of school year. WHAAAAAAAAAAAAAAAAT!!!!! I mean.......I have no problem following orders. I even appreciate for Governor to make quick decision of "Stay Home Healthy". I do not want to send Cadet to school during this pandemic. And I actually like staying home without obligation to make an excuse. But, As I believe a lots of Parents are feeling the same way, I had enough of my child.     LOL Also, my child comes with all kinds of assignment.ugh He is usually on my computer all day because he receives different assignment from his teachers. (Today, I took it from him and sent him to room to practice his clarinet)...
