Konbanwa!
Today was Sunday, even though every day feels pretty much the same lately, all day!
And on Sundays, I try to cook some decent breakfast which I've been kinda failed past few Sundays.
I mean.... what is the difference between Sundays and any other day of the week now??
But, I do, and Cadet (my son) and Marine (my husband) DO love breakfast so I put myself together this morning to fix us some good breakfast.
Wait. No. I take some of that back. I mean, everything I said about how much we love breakfast is true and I did cook breakfast this morning but......
I just realized that, I cooked this hashed brown yesterday. OMG
I totally got it mixed up. lol
Anyway, I DID cooked breakfast this morning,
Bacon, egg with spinach, spam and left over hash brown, which I believe people call it "Crack potato" or something like that.
Anyway, this potato dish is very easy and yummy, and actually, Cadet brought me the recipe one day. lol
Cadet and his friends like to take lunch to school sometimes, even though they hav e school lunch, and one day, one of his friends brought this potato and meatball. Cadet said, they shared each other's lunch, yes it was way before all of this COVID-19 pandemics, and everybody loved his lunch and asked him for the recipes. And within a couple of days, his Mom made a copy of the recipes and gave it to all the friends what they asked for.
WHO DOES THAT?????
I mean, OMG he's got a very nice Mom!!!
I have no idea who the boy or his mom is, but I love both of them.
In the world that gives you a doubt about humanity every day, knowing there are nice and sweet mom and son exist gives me a hope.
Oops. I'm far from the subject, as usual, I was talking about this potato dish. lol
Originally, the recipe has a packet of ranch dressing to add but I only use half of it, if that.
Because I like to add some salt to my dish and to avoid turning my dish too salty, I just use less seasoning than it is instructed. Plus, I always add garlic. Oh, I love garlic. Garlic makes almost everything taste better!!
So dried hashed potato, half the packet of ranch dressing, pinch of salt, some garlic powder, onion powder and shredded cheese (I prefer cheddar).
Mix them all, put it in baking dish, then top it with more shredded cheese and bacon bits then bake for 35 mins at 400F. When it's done, I add some dried parsley or chopped green onions. These are totally optional but adding some color makes a dish look much better.
EASY, right??
In original recipe, it says to use frozen hushed brown but I always have dried one so I follow the direction to prepare it before adding anything else.
Also, salt, garlic and onion powder are not in original recipe that I was given.
I don't think there was bacon bits on top of it either but my Marine and Cadet believe bacon makes everything better, so why not??
Anyway, I try to feed them as much as vegetable so I cooked spinach to eggs but yet, I added spam, lol
If you don't know about Okinawa, it probably sounds funny but Spam is like one of the soul food to us. We grow up eating it with almost everything like....Saute with vegetables, in Miso soup, curry, just fry it with eggs oe sometimes in sandwiches. So I know it is not a best meat products, but I keep them in house all the time and serve it every now and then.
So that's how our breakfast was this morning, with freshly brewed coffee.
